ISO 22000:2018 sets out the requirements for a food safety management system (FSMS). It determines what an organization needs to do to demonstrate its ability to control food safety hazards in order to ensure that food is safe.

ISO 22000 is applicable to all organizationsin the food chain, regardless of size or sector e.g. feed producers, animal food producers, harvesters of wild plants and animals,farmers, retailers, and organizations providing food services, catering services, cleaning and sanitation services, transportation, storage and distribution services, suppliers of equipment, cleaning and disinfectants, packaging materials and other food contact materials.

The international standard ISO 22000: 2018 was adopted in June 2018 by the international organization ISO in order to replace the existing standard (ISO 22000: 2005) for food safety. For those companies that are already certified to comply with the requirements of ISO 22000: 2005, the transition to the new standard is until 29/06/2021.

 Some of the major changes introduced by the new international standard ISO 22000: 2018 in relation to ISO 22000: 2005 are:

  • A stronger emphasis on the participation of leadership.
  • Application of a risk-based approach to the development of the FSMS.
  • Emphasis of key concepts including:
    • The Plan-Do-Check-Act cycle, one covering the management system and the other one covering the principles of HACCP.
    • The differentiation of key terms including critical control points (CCPs), operational prerequisite programs (ORPs) and prerequisite programs (PRPs).
  • Adaption of the high-level structure, according to Annex SL, resulting in the improvement of the compatibility with other ISO management system standards ISO 9001:2015, ISO 14001:2015 and ISO 45001:2018.
